This Homemade Marshmallow Fluff is perfect for spreading on cookies, filling cupcakes, or making s'mores. It's fluffy, sweet, and incredibly delicious!
Ingredients: 3/4 cup granulated sugar. 1/2 cup light corn syrup. 1/4 cup water. 2 large egg whites. 1/2 teaspoon cream of tartar. 1 teaspoon vanilla extract.
Instructions: Place water, corn syrup, and sugar in a small saucepan and heat. Stir until the mixture reaches 240F 115C on a candy thermometer and the sugar has dissolved. In a large mixing bowl, beat the egg whites and cream of tartar until soft peaks form while the sugar syrup is heating. Continue beating at medium speed and slowly pour the sugar syrup into the egg whites when it reaches the desired temperature. After adding all of the syrup, turn the speed up to high and beat the mixture for seven or eight minutes, or until it thickens and gets glossy. After adding the vanilla extract, beat for one more minute to ensure it is well combined. It's time to use your homemade marshmallow fluff! It can be kept for up to two weeks at room temperature in an airtight container.
