These Instant Pot Garlic Mashed Potatoes are quick and easy to make. They go well with any meal. Because the Instant Pot speeds up the cooking process, the mashed potatoes with garlic taste great and are fluffy.
Ingredients: 2 lbs potatoes, peeled and diced. 4 cloves garlic, minced. 1 cup chicken or vegetable broth. 1/2 cup milk or cream. 2 tbsp butter. Salt and pepper to taste. Chopped chives for garnish optional.
Instructions: Put the chicken or vegetable broth, diced potatoes, and minced garlic into the Instant Pot. For 8 minutes, cook on high pressure with the lid locked and closed. Do not open the valve. After the food is done cooking, quickly let the pressure out and carefully open the lid. Take out any extra liquid from the pot so that you are only left with the garlic and potatoes. Put the butter, salt, pepper, milk or cream, and more into the pot. Mash the potatoes until they are smooth and creamy with a potato masher or a hand mixer. If necessary, change the seasoning. If you want, add chopped chives as a garnish before serving.
