Following some Catuai as it journeys through the @fincasanjeronimo washing station. We have warped and bent this particular cultivar over the years with extensive experimentation: forced fermentation with a variety of yeast strains, barrel aging, cask conditioning, hopping, shot pulling, blending, augmenting, Chocolate City-ing etc. It's a special one for us, and we're only getting weirder from here. #catuai #darkmattercoffee #howitsmade #highconceptcoffee #flowertocup2017 #Repost @aaronacampos
