Indulge in the deliciousness of homemade Red Velvet Macarons with a creamy cream cheese filling. These little bites of heaven are perfect for any occasion!
Ingredients: 1 cup almond flour. 2/3 cup powdered sugar. 2 large egg whites. 1/4 cup granulated sugar. 2 tablespoons cocoa powder. 1/2 teaspoon red food coloring. 1/2 teaspoon vanilla extract. 1/4 teaspoon cream of tartar. Pinch of salt. 1/2 cup unsalted butter, softened. 1 cup cream cheese, softened. 2 cups confectioners' sugar. 1 teaspoon vanilla extract. Sprinkles or crushed red velvet crumbs for garnish optional.
Instructions: Preheat your oven to 300F 150C. In a food processor, pulse almond flour and powdered sugar until well combined. Sift the almond flour mixture into a large mixing bowl to remove any lumps. Discard any large particles left in the sieve. In a separate mixing bowl, beat the egg whites until they are frothy. Add cream of tartar, salt, and granulated sugar gradually while continuing to beat until stiff peaks form. Fold the almond flour mixture into the egg white mixture gently, being careful not to deflate the egg whites. Add cocoa powder, red food coloring, and vanilla extract to the batter. Gently fold until the batter is smooth and has a ribbon-like consistency. Transfer the batter to a piping bag with a round tip and pipe small circles onto a baking sheet lined with parchment paper. Let the piped macarons sit at room temperature for about 30 minutes to form a skin. Bake in the preheated oven for 15-18 minutes, or until the macarons have set and have feet. Remove from the oven and let them cool completely. While the macarons are cooling, make the cream cheese filling. Beat together softened butter, cream cheese, confectioners' sugar, and vanilla extract until smooth. Once the macarons are cool, match them into pairs of similar sizes. Pipe or spoon a small amount of cream cheese filling onto one macaron shell and sandwich it with another. Optionally, roll the edges of the filled macarons in sprinkles or crushed red velvet crumbs for a decorative touch. Refrigerate the macarons for at least 24 hours before serving to allow the flavors to meld. Enjoy!
