These Grilled Lemon Chicken Flatbread Wraps taste like they came from the Mediterranean. The chicken that has been marinated is grilled until it's done. It goes well with a cool mix of Greek yogurt, crisp vegetables, and feta cheese.
Ingredients: 4 boneless, skinless chicken breasts. 1/4 cup olive oil. 3 tablespoons fresh lemon juice. 2 cloves garlic, minced. 1 teaspoon dried oregano. Salt and pepper to taste. 4 large flatbreads. 1 cup Greek yogurt. 1 cucumber, diced. 1 cup cherry tomatoes, halved. 1/2 red onion, thinly sliced. 1/4 cup fresh mint leaves, chopped. 1/4 cup feta cheese, crumbled.
Instructions: Mix olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a bowl. This will make the marinade. Pour half of the marinade over the chicken breasts in a plastic bag that can be closed again. Place the bag in the fridge for at least 30 minutes with the lid on. Warm up the grill over medium-high heat. The chicken breasts should be grilled for 6 to 8 minutes on each side, or until they are fully cooked. Throw away the used marinade. After taking the chicken off the grill, let it rest for a few minutes. Then, cut it into thin strips. The flatbreads should be warmed up on the grill for one to two minutes on each side. On each flatbread, put a large spoonful of Greek yogurt. Diced cucumber, cherry tomatoes, red onion, fresh mint, and feta cheese; then sprinkle on top of the yogurt. If you need to, you can use toothpicks to hold the wraps together after folding the flatbreads in half. Grilled Lemon Chicken Flatbread Wraps are ready to eat right away.
