Why honey is terrible for the environment and not vegan: Honeybees are the only bee population you don't need to be worried about. The honey industry is worth billions of dollars, there is no way they're letting it go anywhere. Here's the problem...Only one bee produces 1/16th of a teaspoon of honey in it's lifetime, so you need a lot of bees. Honeybees rely on this honey as food for the winter, so they need a replacement when farmers take this honey from them. Farmers give them a sugar-substitute that is terrible for their health. Honeybees are selectively bred to increase productivity and the narrow gene-pool causes widespread disease and a high chance of die-offs.
