The reason for why the village is named differently is very simple. Farmers in the 18th Century used to brew beer only once, making the ale really weak. Twice brewed meant the beer will taste better, have a stronger flavour and have more alcohol as well, so the pub will serve quality beer instead of the farmers. Whether or not it’s true, is debatable and conjecture. Twice Brewed and Once Brewed, which are the same village, have sign posts either side when visiting by car. When entering the village from the east, the sign reads “Once Brewed” and when entering the village from the west, the sign reads “Twice Brewed”.
