I made my beautiful wife a superb dinner. I served baked Lion Fish, seasoned with dill, lemon, cayenne pepper, smoked sea salt and white wine. I also served a U-6 sea scallop properly seasoned and caramelized. I made two different sauces for the lion fish I served a blackberry mint reduction, and for the scallop I served a cherry ginger reduction, both were freekin amazing on the palate. The side was fontenella cheese orzo with some asparagus sprouts, Lion fish is my new favorite!! Last night I served Baked stuffed chicken breast, stuffed with havarti cheese and juicy pears. Seasoned with fresh rosemary, oregano, saffron, white truffle oil, onion powder, garlic powder, smoked durango sea salt a hint of cayenne pepper. Complemented with a honey mango and vanilla bean reduction. Side included a havarti and fontinella cheese orzo.
