Smooth Caramelized Shallots Hummus is a luxurious twist on traditional hummus, boasting a rich and sweet flavor from caramelized shallots. This creamy dip is perfect for parties, gatherings, or as a flavorful snack.
Ingredients: 2 shallots, thinly sliced. 2 tablespoons olive oil. 1 can 15 ounces chickpeas, drained and rinsed. 2 cloves garlic, minced. 3 tablespoons tahini. 2 tablespoons lemon juice. 1/4 cup water. Salt to taste. Pinch of cumin. Pinch of paprika. Pinch of cayenne pepper optional. Fresh parsley for garnish optional.
Instructions: In a skillet, heat olive oil over medium-low heat. Add shallots and cook until caramelized, stirring occasionally, about 15-20 minutes. In a food processor, combine chickpeas, caramelized shallots, garlic, tahini, lemon juice, water, salt, cumin, paprika, and cayenne pepper. Blend until smooth, scraping down the sides as needed. If the hummus is too thick, add more water, 1 tablespoon at a time, until desired consistency is reached. Transfer hummus to a serving dish, garnish with fresh parsley if desired, and drizzle with a little extra olive oil. Serve with pita bread, crackers, or vegetables. Enjoy!
