Trash meat as more environmentally responsible?
I know I shouldn't be eating meat at all if I care about the environment, but I am a jackass.
I am just curious if eating the unwanted parts of the animal, like whatever ends up in natural/organic pork sausage, or other ground meat dishes like pork dumplings, or deliberately going for the organ meats in whole form, or beef tongue, or red meat chicken, is in any way a more environmentally efficient choice than going for the cuts that an animal makes less of, such as pork chops, chicken breast, or steaks.
The math of meat is weird. Does that stuff get thrown out if the sausage isn't popular enough? Will it all just become dog food if no sausage makers buy it, so the entire choice is moot?
