Well, the same can be said of Enish, which, with its wide selection of exotic sounding dishes, really doesn't believe in compromise. The last thing you want, when seeking after authentic food, is for any restaurant to be guilty of dumming things down to appease the taste buds of the locals. What's the point in that anyway? If you're going to introduce a given cuisine to a new audience, then it makes sense to be true to its spirit, believe in what you know, and force the locals to come out of their comfort zones and appreciate what you love.
