These no-bake energy bites are gluten-free and are great for giving you a quick energy boost. They taste great, are easy to make, and are full of healthy ingredients.
Ingredients: 1 cup gluten-free rolled oats. 1/2 cup creamy almond butter. 1/3 cup honey or maple syrup. 1/4 cup ground flaxseed. 1/4 cup gluten-free chocolate chips. 1 teaspoon vanilla extract. 1/2 teaspoon cinnamon. A pinch of salt.
Instructions: In a large mixing bowl, combine the gluten-free rolled oats, ground flaxseed, gluten-free chocolate chips, cinnamon, and a pinch of salt. Add the creamy almond butter, honey or maple syrup, and vanilla extract to the dry ingredients. Mix until all ingredients are well combined. Place the mixture in the refrigerator for about 30 minutes to make it easier to handle. After chilling, remove the mixture from the refrigerator and use your hands to roll it into bite-sized balls. Place the energy bites on a lined tray or plate and refrigerate for an additional 15-20 minutes to firm up. Once firm, transfer the energy bites to an airtight container and store them in the refrigerator. They can be enjoyed immediately or as a quick gluten-free snack on the go.
