🍝 Homemade pljukanci with pesto 🍝
The recipe for pljukanci, a traditional pasta from the inner Istria, is very simple (video as a reference)
Ingredients:
You're going to need some smooth flour (some people use for the dough a mixture of both smooth and sharp flour), hot/boiling water and fine-grained salt. Some people tend to add an egg or two too, but it is not necessary.
Procedure:
In the recipe, the amount of all ingredients goes deductively, in relation to the amount of pasta someone wants to prepare. The flour needs to be sifted first, then salt is added on a board or in a bowl where the sifted flour is, and then little by little boiled water is added, so you can begin to knead the dough. The dough is adequate when its consistency is a little harder than the one of the dough which is used for homemade bread. Let the dough rest for about half an hour, then start making rolls of dough of the diameter of approximately 2cm, flatten those rolls a bit and the cut them into small slices. Roll each of these slices on the palms of your hands in such a way as to obtain a spindle-shaped piece of pasta. Now pljukanci are ready to be thrown into a pot and cooked. They are being cooked for around 10-15 minutes, depending on how who likes it.
Serving:
Pljukanci are great with homemade goulash (šugo) or with salsa or pesto or whatever suits them. Bon appetit!
* Raw pljukanci can be frozen for another time, just like in the picture below :)
Yesterday I ate the best homemade ice-cream in a long time! 🥰🍨
The service was very kind, they even put 3 scoops of ice cream in my bowl for the price of 1 (8 HRK ~ 1 € ~ 1,25 $), since I couldn't decide which flavour I wanted 🤤 (yes, of course we left a tip too, they really deserved it! Besides great ice cream, best service in a long time, too. I mean, they put so much ice cream in my portion, that I even struggled to finish it and I asked my dad for a little help 😱) The light brown one was Mon Cheri, the dark brown was Jaffa and the whiteish one was Oreo-Raspberry
If you happen to go by any chance in Istria (Croatia), I heartily recommend you to stop by the confectionery "Erman" in Žminj for some delicious homemade ice cream or pastry
