These Fried Egg Macarons are a novel take on classic macarons that blend the savory flavor of sunny-side up eggs with the sweetness of macarons. Ideal for a fun and decadent brunch or breakfast dish!
Ingredients: 2 large eggs. 2 tablespoons butter. 2 macaron shells store-bought or homemade. Salt and pepper to taste. Chopped chives for garnish optional.
Instructions: Heat a non-stick skillet over medium-low heat. Add 1 tablespoon of butter to the skillet and let it melt. Crack the eggs into the skillet and cook them sunny-side up, seasoning with salt and pepper to taste. While the eggs are cooking, warm the macaron shells in a 300F 150C oven for 3-5 minutes until slightly crispy. When the eggs are done to your liking, carefully transfer them on top of one macaron shell. Place the second macaron shell on top of the eggs to create a sandwich. Add the remaining tablespoon of butter to the skillet and melt it. Gently place the macaron sandwich back into the skillet and cook for an additional 1-2 minutes, flipping once, until the macarons are lightly toasted and the butter is absorbed. Remove the Fried Egg Macaron from the skillet, garnish with chopped chives if desired, and serve immediately.
