Ingredients: 1 cup cooked edamame beans. 1 cup cooked butter beans. 2 cloves garlic, minced. 3 tablespoons tahini. 2 tablespoons fresh lemon juice. 2 tablespoons olive oil. 1 teaspoon ground cumin. 1/2 teaspoon salt, or to taste. 1/4 teaspoon black pepper. 2 tablespoons water adjust as needed. Zest of 1 lemon. Fresh parsley, for garnish. Toasted sesame seeds, for garnish.
Instructions: You can use a food processor to mix the cooked butter beans, edamame beans, tahini, fresh lemon juice, olive oil, ground cumin, salt, and black pepper. If you need to, scrape down the sides of the bowl as you blend to make the mixture smooth and creamy. As you blend, add water one tablespoon at a time until you get the consistency you want. You can pick how much water you need based on your taste. You can add more salt, lemon juice, or cumin to the hummus if you think it needs it. The last step is to add the lemon zest and pulse a few times to mix it in. Put the hummus in a bowl to serve. Drizzle some olive oil over it and top it with toasted sesame seeds and fresh parsley. You can eat it as a dip for your favorite snacks or with pita bread and fresh vegetables. Have fun!
