If you want to make traditional crepes taste and feel different, try adding butter beans. For a hearty breakfast or brunch, these savory crepes are a great choice.
Ingredients: 1 cup all-purpose flour. 1 cup milk. 2 large eggs. 1/4 cup melted butter. 1/4 teaspoon salt. 1/2 cup cooked butter beans. 1/4 cup grated cheese optional. Butter for cooking.
Instructions: Put the all-purpose flour and salt in a bowl and mix them together. Mix the milk, eggs, and melted butter together in a different bowl. While whisking, slowly add the wet ingredients to the dry ones until you have a smooth batter. If you want to use grated cheese, add it along with the cooked butter beans. Put a nonstick skillet or crepe pan over medium-low heat and add a little butter to coat it. Pour some of the crepe batter into the pan and swirl it around to make it spread out evenly. It should be cooked for two to three minutes, or until the bottom is golden brown and the edges begin to lift. Turn the crepe over and cook for another one to two minutes, until the other side is golden brown too. Add more butter to the pan as needed and do it again with the rest of the batter. If you want, you can top the Pan-polo with Butter Beans Crepe with extra butter beans and cheese before serving it hot.
