Have you ever had Nata De Coco? Nata de coco (also marketed as "coconut gel") is a chewy, translucent, jelly-like food produced by the fermentation of coconut water,which gels through the production of microbial cellulose by Acetobacter xylinum. Did you know you could make your own? I make this anytime my scoby gets way too big when I make kombucha. I just woke my scoby up from its hotel and WOW was it large lol. I cut the scoby into pieces, boil in water then drain. Repeat this process over and over until the scoby doesn’t taste like vinegar. Once done you can cook it with sugar and any flavoring you want. Just simmer the scoby, sugar and flavoring till the taste it all the way through the scoby pieces. The longer it sits...the better it taste.
