Ingredients: 1 cup rice. 2 cups chicken broth. 1 chicken breast, diced. 8 shrimp, peeled and deveined. 1 sausage link, sliced. 1 onion, chopped. 2 cloves garlic, minced. 1 red bell pepper, diced. 1 tomato, diced. 1/2 cup frozen peas. 1 teaspoon paprika. 1/2 teaspoon saffron threads optional. Salt and pepper to taste. 2 tablespoons olive oil. Lemon wedges, for serving.
Instructions: In a large skillet, heat olive oil over medium heat. Add diced chicken breast and sausage slices. Cook until browned, about 5 minutes. Add chopped onion, minced garlic, diced bell pepper, and diced tomato. Cook until vegetables are softened, about 5 minutes. Stir in rice, paprika, and saffron threads. Cook for 2 minutes, stirring constantly. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
