These adorable Easter cupcakes are perfect for celebrating the holiday. The chocolate cupcakes are topped with a coconut 'nest' filled with colorful candy-coated chocolate eggs, and a touch of green frosting to create a festive Easter scene.
Ingredients: 1 box of your favorite cupcake mix. 1/2 cup of vegetable oil. 3 eggs. 1/2 cup of milk. 1 cup of shredded coconut. 1 cup of pastel-colored candy-coated chocolate eggs. 1/4 cup of green frosting. 1/4 cup of chocolate frosting. 12 cupcake liners.
Instructions: Preheat your oven to 350F 175C and line a cupcake tin with 12 cupcake liners. In a large bowl, combine the cupcake mix, vegetable oil, eggs, and milk. Mix until well combined. Fill each cupcake liner 2/3 full with the cupcake batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into a cupcake comes out clean. Remove the cupcakes from the oven and let them cool completely on a wire rack. Once the cupcakes are cool, spread a thin layer of chocolate frosting on top of each cupcake. Sprinkle shredded coconut on top of the chocolate frosting to create the 'nest' for the eggs. Place 2-3 pastel-colored candy-coated chocolate eggs in the center of each coconut 'nest'. Using green frosting, pipe small 'grass' patches around the eggs to complete the look of the nest. Your Nest and Eggs Easter Cupcakes are now ready to be enjoyed!
