Savor the flavorful marinade of perfectly smoked duck breasts with maple smoke for a delightful culinary experience.
Ingredients: 4 duck breasts. 1/2 cup pure maple syrup. 1/4 cup soy sauce. 2 tablespoons Dijon mustard. 1 tablespoon olive oil. 2 cloves garlic, minced. 1 teaspoon black pepper. 1 teaspoon smoked paprika. 1/2 teaspoon cayenne pepper. Maple wood chips, soaked in water.
Instructions: In a bowl, whisk together maple syrup, soy sauce, Dijon mustard, olive oil, minced garlic, black pepper, smoked paprika, and cayenne pepper to create the marinade. Place duck breasts in a resealable plastic bag and pour half of the marinade over them. Seal the bag and refrigerate for at least 2 hours, preferably overnight. Preheat your smoker to 225F 107C, adding soaked maple wood chips for flavor. Remove duck breasts from the marinade and let them come to room temperature while the smoker heats up. Place the duck breasts on the smoker grates and smoke for 1.5 to 2 hours or until the internal temperature reaches 165F 74C. Baste the duck breasts with the remaining marinade every 30 minutes during smoking. Once done, remove from the smoker and let them rest for 10 minutes before slicing. Serve the maple-smoked duck breasts with your favorite sides and enjoy!
