Lately, I have been searching for new ways to expand on the organic section, broadening it to include biodynamic and "natural" selections as well. I was thrilled to get my hands on the Doneky & Goat line and am equally excited to bring in Domaine Rimbert, through Jenny & Francois, importers of natural wine. They search out and find wine artisans, small vineyards focusing on reduced yields and letting the wine find its own identity.
What is a natural wine anyway? Natural winemakers use organic methods in the cellar as well as in the vineyard — meaning no laboratory yeasts, enzymes, sugar, artificial concentrators, acidification, or sulfites are added during fermentation, and the wines are aged and bottled without stabilizers, or excessive filtering or sulfites. It's organic on a stellar level.
Domaine Rimbert is certified sustainable, handpicks and destems the grapes, using the indigenous yeast already present for fermentation, blending carignan, syrah, cinsault and mouvedre.
These wines are made with passion, with love for the grape as well as the earth in which it grows. In short, these are wines that should not be passed up.
