Indulge in the delectable flavors of a traditional pecan pie in the form of delectable cookies! Diane's Pecan Pie Cookies have a buttery and chewy cookie base with chopped pecans that add a delightful crunch and nutty goodness.
Ingredients: 1 cup unsalted butter, softened. 1 cup light brown sugar, packed. 1 large egg. 1 teaspoon pure vanilla extract. 2 cups all-purpose flour. 1 teaspoon baking soda. 1/4 teaspoon salt. 1 cup pecans, chopped.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Melt the butter and mix it with the brown sugar in a large bowl until the mixture is smooth. Mix in the egg and vanilla extract until everything is well mixed. Mix the flour, baking soda, and salt together in a different bowl. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Add the chopped pecans and mix them into the dough until they are spread out evenly. Using a cookie scoop or a tablespoon, drop dough onto the baking sheet in round spoonfuls. Press down a little on each cookie with your fingers or the back of a spoon. For 10 to 12 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. With milk or your favorite hot drink, these Pecan Pie Cookies are a great treat.
