Finding it tough to make bread every day or so? No worries. Make a batch at once. After the first rise, punch it down, portion out, and put in pans that will nest with plastic wrap between the layers. Just cover the dough with wrap and stack another tray on top. These are in disposable trays for sharing but you can use bread pans or Evan plastic zip bags. Then pop them in the freezer without rising. When you are ready to use, pull them out of the freezer and allow to thaw and rise and bake. I'll pull it out and let it rise in the oven for 4-8 hours. Set gently on stove while oven preheats and then bake.
