Taro and adjusted miso dip: Dengaku (cooking)
In Japan, this dish is called ``dengaku.'' It is a dance that is the predecessor of Noh and Kyogen, but it is unclear why it is called that. Taro is peeled and boiled until it's soft enough to melt, (Boiling also has the effect of removing oxalic acid.) then eaten with a dip made from miso, vinegar, sugar, and mustard. It's delicious. It is said that Japanese mochi is modeled after taro.
里芋と調整味噌ディップ(料理)
日本では、このディップのことを「田楽」と呼ぶ。能や狂言の前身の舞踊のことだが、なぜそう呼ぶのかは不明。皮を剥いてよく茹でてとろけるほど柔らかくした里芋(茹でることで、シュウ酸を除く効果もある。)に、味噌、酢、砂糖、芥子を混合したディップをつけて食べる。美味である。日本の餅は、里芋を模したものであるとも言われる。
