This jam, which is thick and delicious, has the ideal balance of flavorssweet, savory, and just a hint of smoke. It's a flavorful condiment that works well on burgers, sandwiches, and other foods. Its rich, decadent flavor will be too much for you to resist.
Ingredients: 1 lb thick-cut bacon, chopped. 1 large onion, finely chopped. 3 cloves garlic, minced. 1/2 cup brown sugar. 1/4 cup maple syrup. 1/4 cup apple cider vinegar. 1/4 cup strong brewed coffee. 1/4 tsp black pepper. Pinch of cayenne pepper optional.
Instructions: Cook the chopped bacon in a big skillet over medium-high heat until it's crispy. Using a slotted spoon, remove the bacon and place it on paper towels to remove any remaining grease. Add the minced garlic and finely chopped onion to the bacon drippings in the same skillet and cook for about 5 minutes, or until the ingredients are soft and translucent. Add the crispy bacon back to the skillet along with the garlic and onions. To the skillet, add the apple cider vinegar, brown sugar, maple syrup, and strong brewed coffee. Toss to thoroughly mix in all the ingredients. If you want a hint of spice, add a pinch of cayenne pepper along with some black pepper to the mixture. Turn down the heat to low and simmer, stirring now and then, until the mixture thickens to a jam-like consistency, 45 to 60 minutes. After it becomes thick, take it off the heat and let it cool down a little. Once the bacon jam is in the food processor, pulse it a few times to get the texture you want. You have the option of making it smooth or chunky. Before putting the bacon jam in an airtight container, let it cool completely. It will keep for up to two weeks in the refrigerator. Serve this rich and flavorful bacon jam as a topping for your favorite recipes or as an addition to burgers, sandwiches, and crackers. Have fun!
