All the technical terms, the way the director thinks out loud about how he's going to cut the sequence if they stop there or some changes he wants to do, the way the crew flowed with each other, the way the cast made their feelings come out on screen, what everyone's title is and what it means, how details go into stuff (the way they wore their clothes, if a set up was correct) ...
