What IS an emdash
An em dash (—, named because it's the size of the letter M) is the proper typographical way to indicate a pause—like this—in a sentence.
In contrast, an en dash (–) is used to indicate ranges, such as 8 a.m.–9 p.m.
A normal hyphen (-) is used to conjoin words, such as anti-theft.
While en dashes are somewhat pedantic, em dashes help give a pause proper weight and prevent the reader from accidentally reading the pause as a compound word.
Also worth noting that none of the above should be used with spaces around them.
