The dogs had been smelling this all day, and by the time I was ready to pull these two chuck roasts they were right there waiting. The roasts were slathered in a Louisiana style hot sauce, rubbed in kosher salt and pepper, and then smoked with oak for about 8 hours. I served the beef on some massive hoagie rolls @crittercrazychrissy found at the store with some coleslaw and some home made bbq sauce. The only thing I would change for next time would be a few slices of pepper jack cheese on the sandwich. And there you have it, folks.
