注目すべきは焙煎度。中浅～中煎りが好きならば、COEの豆を扱っている店がいいだろう。深すぎない焙煎でフルーティで明るく華やかなカップをめざしているはず。中深～深煎りが好きならば、ケニアはやっぱりフレンチローストだとか、コーヒーを赤ワインに例えた話をよくしているロースターさんがおすすめ。深めの焙煎でも煙を被らないように工夫した、おいしい深煎りコーヒーが飲めるはず。
