Ingredients: 1 1/2 cups shredded zucchini about 1 medium zucchini. 1/2 cup mashed ripe banana about 1 medium banana. 1/4 cup honey. 1/4 cup unsweetened applesauce. 1/4 cup plain Greek yogurt. 1 large egg. 1 teaspoon vanilla extract. 1 1/2 cups whole wheat flour. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 teaspoon ground cinnamon. 1/4 teaspoon nutmeg. 1/2 cup dark chocolate chips optional.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. Place the shredded zucchini in a clean kitchen towel and squeeze out any excess moisture. In a large mixing bowl, combine the mashed banana, honey, applesauce, Greek yogurt, egg, and vanilla extract. Mix until well combined. Add the shredded zucchini to the wet ingredients and stir to combine. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix. If desired, fold in the dark chocolate chips.
