Something simple and homey for #dinner tonight. #stewbeef #currystyle!!! 3 lbs of tough beef slow simmered for several hours with the lid off to help reduce the cooking liquid. Creating an extra beefy soup stock and ultra tender beef bites. Tossed in some onions, baby yukon golds, celery, and baby carrots to help strengthen the flavor of the soup base. As an added bonus I threw in some meaty mushrooms that I sautéed in a separate pan where I added some of the cooking liquid and curry roux. Threw it back into the main pot and watched as it thickened. Meanwhile as the curry simmered for a bit, I started my rice. I flubbed when I realized I was out of both short and medium grain rice...heck we were even low on long grain and instant rice but I made due. Dinner came out greater than I expected, at least that's what I gathered from the silence from the family as they ate(you know the food is good when the whole family is quiet when they are eating).
