Ingredients: 1 cup all-purpose flour. 1/4 cup granulated sugar. 1 tsp baking powder. 1/4 tsp salt. 1/4 cup milk. 1/4 cup pomegranate juice. 2 tbsp unsalted butter, melted. 1 large egg. 1/2 tsp vanilla extract. 1/4 cup pomegranate seeds for garnish. 1 cup powdered sugar. 2 tbsp pomegranate juice for glaze. 1/2 tsp lemon zest. Vegetable oil for frying.
Instructions: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. In another bowl, combine the milk, pomegranate juice, melted butter, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350F 175C. Drop spoonfuls of the donut batter into the hot oil and fry until golden brown, about 2-3 minutes per side. Remove the donuts from the oil and drain on paper towels. In a small bowl, whisk together powdered sugar, pomegranate juice, and lemon zest to make the glaze. Dip each donut into the glaze and return to the paper towels to set. Sprinkle pomegranate seeds on top of the glazed donuts for garnish. Serve the Pomegranate Curd Donuts and enjoy!
