Ingredients: 1 cup rolled oats. 1 cup all-purpose flour. 1/2 cup brown sugar. 1/2 cup granulated sugar. 1/2 cup unsalted butter, softened. 1/2 cup chocolate chips. 1/4 cup cooked bacon bits. 1 egg. 1/2 teaspoon baking soda. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Preheat the oven to 350F 175C and line a cupcake tray with paper liners. In a bowl, mix together the softened butter, brown sugar, and granulated sugar until creamy and well combined. Add the egg and vanilla extract to the butter-sugar mixture, and mix until smooth. In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt. Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined. Fold in the chocolate chips and cooked bacon bits into the cookie batter. Spoon the batter into the cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 15-18 minutes, or until the edges are golden brown. Remove from the oven and let the cupcakes cool in the tray for a few minutes before transferring to a wire rack to cool completely.
