These cucumber sushi rolls with low carbs are a healthy and refreshing change from regular sushi rolls. They are a great keto-friendly snack or appetizer because they are full of fresh vegetables, creamy avocado, and salty smoked salmon.
Ingredients: 2 large cucumbers. 1 avocado, sliced. 1/2 red bell pepper, thinly sliced. 1/2 yellow bell pepper, thinly sliced. 1/2 carrot, thinly sliced. 4 oz smoked salmon. 2 tbsp cream cheese. 2 tbsp mayonnaise. 1 tbsp rice vinegar. 1 tsp sesame oil. Salt and pepper to taste.
Instructions: Using a mandoline or vegetable peeler, slice the cucumbers lengthwise into thin strips. Blot the cucumber strips with paper towels to remove excess moisture. In a small bowl, mix cream cheese, mayonnaise, rice vinegar, sesame oil, salt, and pepper. Lay cucumber strips flat on a clean surface. Spread a thin layer of the cream cheese mixture onto each strip. Place slices of avocado, bell peppers, carrot, and smoked salmon on top of the cream cheese mixture. Carefully roll up each cucumber strip with the filling inside to form sushi rolls. Slice the rolls into bite-sized pieces. Serve immediately or refrigerate until ready to eat.
