These Slow Cooker Asian Chicken Lettuce Wraps are a delicious and healthy dinner option. The chicken cooks low and slow in a flavorful sauce until tender and juicy, then it's served on crisp lettuce leaves for a refreshing crunch.
Ingredients: 1.5 lbs boneless, skinless chicken thighs, chopped. 1/2 cup low sodium soy sauce. 1/4 cup hoisin sauce. 3 cloves garlic, minced. 1 tablespoon grated ginger. 2 tablespoons rice vinegar. 2 tablespoons honey. 1 tablespoon sesame oil. 1/4 teaspoon red pepper flakes. 1/4 cup water chestnuts, chopped. 1/4 cup green onions, chopped. 1 head butter lettuce, leaves separated.
Instructions: In a slow cooker, combine soy sauce, hoisin sauce, garlic, ginger, rice vinegar, honey, sesame oil, and red pepper flakes. Add chopped chicken thighs to the slow cooker and toss to coat with the sauce. Cover and cook on low for 4-5 hours or high for 2-3 hours, until chicken is cooked through and tender. Once chicken is cooked, shred it using two forks. Stir in chopped water chestnuts and green onions, cook for an additional 15 minutes. Spoon chicken mixture onto lettuce leaves, serve immediately.
