Adding crispy fried tomatoes covered in breadcrumbs to a classic BLT sandwich makes it taste even better. It's served with Duke's Mayonnaise for extra flavor.
Ingredients: 4 slices of bread. 8 slices of bacon. 2 large tomatoes, sliced. 1/4 cup Duke's Mayonnaise. 1/4 cup all-purpose flour. 1 egg. 1/2 cup breadcrumbs. Salt and pepper to taste. Lettuce leaves.
Instructions: Fry the bacon in a skillet over medium heat until crispy. Remove and set aside on paper towels to drain excess grease. In a shallow dish, whisk the egg. Place the flour and breadcrumbs into separate shallow dishes. Dip tomato slices first into the flour, then into the egg, and finally into the breadcrumbs, coating evenly. In the same skillet used for bacon, heat oil over medium-high heat. Fry the coated tomato slices until golden brown on both sides. Remove and set aside on paper towels. Toast the bread slices. Spread Duke's Mayonnaise on one side of each bread slice. Layer lettuce leaves, fried tomatoes, and bacon on one slice of bread. Top with another slice of bread, mayo side down. Cut sandwiches in half diagonally and serve.
