This Crispy Garlic Potato Roast is a delightful dish with thinly sliced potatoes roasted to perfection with garlic, herbs, and Parmesan cheese, resulting in a crispy and flavorful side dish.
Ingredients: 2 lbs potatoes, thinly sliced. 4 tablespoons olive oil. 4 cloves garlic, minced. 1 teaspoon salt. 1/2 teaspoon black pepper. 1 teaspoon dried thyme. 1/2 teaspoon paprika. 1/4 teaspoon red pepper flakes optional. 2 tablespoons grated Parmesan cheese.
Instructions: Preheat oven to 400F 200C. In a large bowl, toss potatoes with olive oil, minced garlic, salt, black pepper, thyme, paprika, and red pepper flakes if using. Arrange potato slices in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 30-35 minutes, flipping halfway through, until potatoes are golden brown and crispy. Sprinkle grated Parmesan cheese over the potatoes during the last 5 minutes of baking. Serve hot and enjoy!
