Ingredients: 1.5 lbs red potatoes, quartered. 3 tablespoons olive oil. 4 cloves garlic, minced. 1 teaspoon dried thyme. Salt and black pepper to taste. 2 tablespoons chopped fresh parsley optional.
Instructions: Warm the oven up to 425F 220C. Place cut red potatoes in a large bowl and add olive oil, minced garlic, dried thyme, salt, and black pepper. Toss the potatoes until they are well covered. Place the potatoes on a baking sheet that has been lined with aluminum foil or parchment paper. Spread them out in a single layer. Put the potatoes in an oven that has already been heated up. Roast them for 25 to 30 minutes, stirring them once, until the outside is golden and crispy and the inside is soft. When it's done, take it out of the oven and, if you want, sprinkle it with chopped fresh parsley before serving.
