Mac'n'cheese with rotisserie chicken (the Boychick's request)
Wrap (last one) with rotisserie chicken, garlic mayo, avocado, string cheese, and romaine lettuce (cold)
Leftover noodles with rotisserie chicken (why yes, we bought a chicken from the deli last night), avocado, and string cheese (hot) -- this one turned out so well The Man insisted I have some, in between stuffing it in his own mouth
(All created with the assistance of my much-maligned -- often by me -- microwave. I usually consider it cheating/inferior, but when it's 3pm and I haven't eaten since breakfast and the kid is melting down from blood sugar crashing, anything that helps me cheat is my *friend*.)
Seriously, half my "cooking" is looking in the fridge and going "crap, how do I make a meal out of that??" And the thing is, the more cooking I do, and the more I attempt creativity with leftovers, the better I get at this (plus, the more I tend to have around to work with -- including sometimes store-bought mac'n'cheese and chicken). Meaning that last-minute meal creation is actually easier. I don't know if it works that way for anyone else, and there are definitely still times where I go JUST ORDER PIZZAAAAAA (and then the man makes amazing last-minute sauteed chicken or bean dip or spaghetti -- or orders pizza), but it's working more and more for me, and I've been kinda loving it.
