Vegan Keto Taco Casserole. I adapted an animal product recipe because anything can be vegan. Made in a 13x9 in pan. Bottom layer: #cauliflowerricerecipe 1 TBSP olive oil 4 C riced cauliflower Salt to taste Juice of one lime 10 Oz can diced tomatoes 1/2 tsp red pepper flakes Second layer: Sautee 2 chile dulce and 1 chopped onion with 4 cloves minced garlic in 1 TBSP olive oil with salt and pepper to taste. Third layer: Combine 1 avocade and 3 TBSP coconut milk with the juice of 1 lime, 1 clove garlic, 1/2 tsp onion powder, salt and pepper to taste, in the food processor. Thin with vinegar. Needs to be the consistency of sour cream. Fourth layer: Saute 1 chopped onion with 4 cloves garlic in 1 TBSP olive oil. Throw in taco seasoning to taste, 1 tsp achiote, 1 tsp cumin, salt and pepper to taste. Add 2 C. reconstituted soy crumbles and combine. Reduce heat and simmer for 10 minutes, stirring often, and adding water as needed. Topping: I used coconut, but you can use vegan cheese, if it's available. On top of the coconut, press cherry tomatoes, cut in half with the cut side up, all over the top. Bake for 20 minutes at 400 degrees or until bubbly. Top with fresh cilantro. I was upset yesterday, so I spent 3 or 4 hours cooking, like you do. This was so good!
