Ingredients: 5 pounds pork fat, preferably leaf fat.
Instructions: Chop the pork fat into cubes that are about one inch in size. Transfer the fat pieces to a Dutch oven or pot with a heavy bottom. Simmer on low heat, stirring from time to time, until the fat completely melts and becomes liquid lard. This could take a few hours to complete. After the fat has rendered and some crispy bits remain, pour the liquid lard into heatproof containers using cheesecloth or a fine mesh strainer. Before putting the rendered lard in the freezer or refrigerator for later use, let it cool.
