Enjoy the delightful fusion of mint and chocolate in this Grasshopper Pie Pizookie. A scoop of mint chocolate chip ice cream and a cool grasshopper pie sauce are placed on top of a warm, gooey chocolate cookie.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup brown sugar, packed. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup chocolate chips. 1/2 cup Andes mint chips or chopped Andes mints. 1/4 cup green crme de menthe liqueur. 1/4 cup white crme de cacao liqueur. 1/4 cup heavy cream. 1 pint mint chocolate chip ice cream for serving. Whipped cream and chocolate sauce optional, for garnish.
Instructions: Set the oven temperature to 175C 350F. Mix the flour, baking powder, baking soda, cocoa powder, and salt in a medium-sized bowl. Put aside. Beat the softened butter, brown sugar, and granulated sugar in a sizable mixing bowl until the mixture is light and fluffy. To the butter-sugar mixture, add the egg and vanilla extract, and stir until thoroughly blended. Mixing until a soft dough forms, gradually add the dry ingredient mixture to the wet ingredients. Add the chocolate chips and Andes mint chips or chopped mints to the dough and stir until well combined. Press the dough into an oven-safe pie dish or a 10-inch cast-iron skillet. Bake for 18 to 20 minutes in a preheated oven, or until the center is still slightly gooey but the edges are set. Make the grasshopper pie sauce while the pizookie bakes. Mix the heavy cream, white chocolate, and green crme de menthe in a saucepan over low heat. Stir until thoroughly heated and well combined. Take it off the heat and allow it to cool a little. When the pizookie is done baking, take it out of the oven and, while it's still warm, pour the grasshopper pie sauce over it. Before serving, let the pizookie cool for a few minutes. Scoop out portions of the grasshopper pie pizookie to serve, then place a scoop of mint chocolate chip ice cream on top of each serving. If desired, garnish with chocolate sauce and whipped cream.
