This Cucumber and Chickpea Salad is a refreshing and healthy dish perfect for a light lunch or side dish. The combination of crisp cucumbers, hearty chickpeas, and tangy feta cheese is both delicious and satisfying.
Ingredients: 2 cucumbers, diced. 1 can 15 oz chickpeas, drained and rinsed. 1/2 red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup feta cheese, crumbled. 2 tablespoons olive oil. 2 tablespoons lemon juice. Salt and pepper to taste.
Instructions: In a large bowl, combine the diced cucumbers, chickpeas, red onion, and fresh parsley. In a small bowl, whisk together the olive oil and lemon juice to make the dressing. Season with salt and pepper. Pour the dressing over the salad and toss to coat all the ingredients. Sprinkle crumbled feta cheese on top. Chill in the refrigerator for 30 minutes before serving. Serve chilled and enjoy!
