Mini treats inspired by the classic Boston Cream Pie, with soft cookie bites filled with creamy custard and drizzled with luscious chocolate.
Ingredients: 1 cup all-purpose flour. 1/4 cup granulated sugar. 1/4 cup unsalted butter, softened. 1 egg. 1/2 teaspoon vanilla extract. 1/4 teaspoon baking powder. 1/8 teaspoon salt. 1/2 cup whole milk. 1/2 cup heavy cream. 1/2 cup semi-sweet chocolate chips. 1 tablespoon cornstarch. 2 tablespoons confectioners' sugar.
Instructions: Warm the oven up to 350F 175C and put paper liners in a mini muffin tin. Add the flour, sugar, egg, vanilla extract, baking powder, and salt to a bowl. The butter should be soft. Mix until the dough is smooth. Put a little over half of the dough into each mini muffin cup. After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are golden. Leave them in the muffin tin to cool down. Get the cream filling ready while the cookie bites cool. To make a smooth paste, mix the cornstarch and a little milk in a saucepan with a whisk. Slowly add the heavy cream and the rest of the milk. Stir the mixture all the time over medium-low heat until it gets thicker and starts to gently boil. Take it off the heat and let it cool down a bit. Spread the cream filling over the cool cookie bites in the muffin tin after it has cooled a bit. To make the chocolate smooth, melt the chips in a bowl that can go in the microwave for 20 seconds at a time, stirring between each time. Pour the melted chocolate over the cookie bites that are filled with cream. To finish, sprinkle confectioners' sugar over the tops of the cookie bites. Set the filling and chocolate on the cookie bites by putting them in the fridge for about 30 minutes. Enjoy the Boston Cream Pie Cookie Bites after you've made them.
