Lemon, Tomato, and Feta Coodles are a light and refreshing gluten-free dish that tastes like feta cheese, sweet cherry tomatoes, and sour lemon. This recipe is quick and easy, and it's great for a healthy dinner during the week.
Ingredients: 2 large zucchinis, spiralized into zucchini noodles coodles. 1 pint cherry tomatoes, halved. 1/2 cup crumbled feta cheese. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 lemon, zest and juice. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Warm up the olive oil in a big pan over medium-high heat. Add the minced garlic and cook for one minute, until the garlic smells good. Put the cherry tomatoes in the pan and cook them for 5 to 7 minutes, stirring them every now and then, until they soften and release their juices. Add the spiralized zucchini noodles coodles and stir them in. Cook for another two to three minutes, or until the coodles are soft but still a little crunchy. Take the pan off the heat and add the lemon zest, lemon juice, salt, pepper, and crumbled feta cheese right away. Add everything to the bowl and mix it well.
