Ingredients: 2 cups cassava flour. 1 cup coconut sugar. 1/2 cup cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 3/4 cup coconut oil, melted. 4 large eggs. 1 cup dairy-free milk such as almond or coconut milk. 2 teaspoons vanilla extract.
Instructions: Set the oven to 350F 175C and heat it up. Put parchment paper around the bottom of a 9-inch round cake pan that has been greased. Mix the cocoa powder, baking soda, salt, coconut sugar, and cassava flour in a large bowl with a whisk. Melt the coconut oil and mix it with the eggs, dairy-free milk, and vanilla extract in a different bowl. Slowly add the wet ingredients to the dry ones while stirring them together until they are well mixed and the batter is smooth. When the cake pan is ready, pour the batter into it and spread it out evenly. After the oven is hot, bake it for 35 to 40 minutes, or until a toothpick stuck in the middle comes out clean. After taking the cake out of the oven, let it cool for 10 minutes in the pan. Then, move it to a wire rack to cool all the way down. Cut it up and serve after it has cooled down. Have fun!
