Ingredients: 1 cup couscous. 1 cup coconut milk. 1 cup pineapple chunks. 1/2 cup cashews. 1/4 cup shredded coconut. 2 tablespoons coconut oil. 1 tablespoon honey. 1/2 teaspoon salt. 1/4 teaspoon ground ginger. 1/4 teaspoon ground cinnamon. Fresh cilantro leaves for garnish.
Instructions: In a saucepan, heat the coconut milk, coconut oil, honey, salt, ground ginger, and ground cinnamon over medium heat until it begins to simmer. Stir in the couscous, remove from heat, cover, and let it sit for 5 minutes. Fluff the couscous with a fork and transfer it to a serving bowl. Add the pineapple chunks, cashews, and shredded coconut to the couscous, and gently toss to combine. Garnish with fresh cilantro leaves. Serve warm and enjoy!
