Lately I’ve had the pleasure of riding around the island with a driver named Philip while working on a research study investigating pediatric asthma here in Grenada. That’s a story for another post, but Philip is the absolute best and most knowledgable driver on the island! He taught me all about the cocoa business during our travels today.
In the first picture, you can see a cocoa tree. The next picture down shows the cocoa pods, yellow and ripe. The ones that have green are not yet ready. After the pods are harvested, they are opened and wet beans are removed. This is done by hand.
The next step is to take the beans to a fermentary. This is pictured in the third and fourth photos. Those beans have been there for about a week. Last week when we drove by, you could smell the fermentation process from blocks away. Today, though, it wasn’t as pungent. Philip explained that the woman is walking with bare feet in the beds of cocoa (yep! Those are huge beds of cocoa beans!) to mix the beans up.
After the fermentation is complete, the beans are sun dried and then bagged and brought to the warehouse where they will be bought (bottom picture).
These pictures were taken in various parts of the island, not all next to each other. You can see that the processing of cocoa is quite labor intensive. I also learned that Grenadian cocoa beans are higher in fat content than most. For this reason, they are used in many creams, soaps, and lotions in addition to producing chocolate treats!
