This delectable Southern Potato Salad is picnic ready and packed with creamy, tangy, and savory flavors. It's a classic side dish that's perfect for any outdoor gathering.
Ingredients: 4 cups potatoes, diced. 1/2 cup mayonnaise. 2 tablespoons mustard. 1/2 cup celery, finely chopped. 1/4 cup red onion, finely chopped. 2 hard-boiled eggs, chopped. 2 tablespoons sweet pickle relish. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper optional. 2 tablespoons fresh parsley, chopped.
Instructions: In a pot of salted water, boil the diced potatoes for about 10 to 15 minutes, or until they are soft. Take them out of the water and let them cool. Put celery, red onion, hard-boiled eggs, sweet pickle relish, salt, black pepper, paprika, and cayenne pepper if using in a bowl and mix them all together. Combine well. When the potatoes are cool enough to handle, add them to the bowl and carefully fold them into the dressing until they are well covered. Put the potato salad in the fridge for at least an hour to let the flavors mix. Add fresh parsley and a little more paprika, if you want, to the top before serving.
