Ingredients: 1 lb cooked shrimp, peeled and deveined. 1 cup iceberg lettuce, chopped. 1 cup romaine lettuce, chopped. 1/2 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 1/4 cup cucumber, diced. 2 hard-boiled eggs, sliced. 1/4 cup black olives, sliced. 1/4 cup green olives, sliced. 1/4 cup Thousand Island dressing. Salt and pepper to taste.
Instructions: In a large salad bowl, combine the chopped iceberg and romaine lettuce. Add the cooked shrimp on top of the lettuce. Arrange the cherry tomatoes, red onion, cucumber, hard-boiled eggs, black olives, and green olives over the shrimp and lettuce. Drizzle Thousand Island dressing over the salad.
